Bacon Sandwich

Such a simple sandwich needs the proper ingredients to be 1: worth it, and 2: not become a disaster to eat.

The bread is important.  It should be a good sourdough cut thick, and grilled (dry over open flame or buttered in a pan) in order to stand up to the fat and liquids involved.  A "Loaf" shaped sourdough will make an easier to cut, cook and handle sandwich that will look better as well.  Classic Artisanal loaf slices will create a much larger sandwich that will require more ingredients and space to cook, but would be great to share with someone as well.

Bacon.  Back Bacon* provides a higher meat to fat ratio for more pork flavor while still bringing the fabulous "bacon grease" flavor that American bacon is known for.

Beefsteak Tomato has more "meat" to it and is more flavorful than "store bought" tomatoes.  All the ingredients need to have strong flavors to compete with the bacon.  If you don't use a good, heritage tomato... don't bother.  You'll just be adding water to the sandwich.

Caramelized onions.  Don't be fooled by internet recipes that say it takes 6-8 minutes.  Properly cooked caramelized onions takes ~30 minutes to bring out the rich flavor and natural sugars.  Do it right.  It matters.  Bon Appetit has a good, proper recipe.

Chipotle Mayonnaise.  Your favorite store bought variety, or ANY flavored mayonnaise.  I would recommend making your own, such as the recipe from Serious Eats.

And finally some cool lettuce.  Frankly an optional ingredient.  Mostly for color, appearance.  But if you are going to have some, make it aggressive, such as Arugula, to complete with all the other flavors.  If you have a favorite, fine.  Iceburg at least provides the additional color.

* Free Range Berkshire Smoked Rind bacon would probably be the best.
